My wife, who comes from China, put it very succinctly once:
“Western cuisine is like eating mere ingredients”.
To her, Western cuisine is…
- heavy in protein;
- heavy in carbohydrates;
Literally like walking into some castle kitchen and eating a lump of dough and a few peas and some piece of whole animal anatomy before a chef could actually do something meaningful with it all.
After a few years of living in China, I came pretty close to feeling the same way, even when visiting France, which used to be my Mecca of fine foods. By comparison to authentic, Chinese cuisine, everything seems so… well, see bullet points above.
